From cider to wine… or the other way round?

Jean-David has been working for 25 years in the world of wine and champagne, alongside vignerons or winemakers creating cuvées with strong personalities. Being alongside these artisans, constantly asking them questions… These encounters and countless hours spent in the vineyards, wineries and cellars have clearly enriched and driven – intellectually and technically – the Eclectik project.
That’s why Jean-David talks about wine-inspired ciders or even of apple wines, particularly thanks to the specific aging and blending approach at the heart of our cidermaking.

Eclectik : the right trigger

Making his own wine has always been in the back of Jean-David’s mind, but it required finding the right timing, a suitable place, and the right connections to find grapes or musts, which is not always easy in Bourgogne…

In 2020, the Eclectik cider project became the trigger and provided Jean-David with the means to launch winemaking. With a bit of hindsight, Jean-David thinks that the name Eclectik, a combination of creativity and diversity, was not chosen by chance!

Short range and pleasure-driven wines

The generous harvests of 2022 and 2023 in Bourgogne greatly facilitated the creation of our wines, allowing our winemaker friends to sell us some of their grapes, and to make a bit of space at their place to vinify! We had to start somewhere… so a huge thank you to them (they will recognize themselves).

Our range of wines aims to be accessible, just like our ciders. It focuses on regional appellations and one or two favorite villages. The quantities are modest (a few barrels), with the same approach as for our ciders: the most natural possible work, gentle vinification, slow aging in barrels of a few years to preserve the deliciousness of the fruit.
